8Cr14MoV is a Chinese stainless steel that has gained wide use in the knife industry thanks to its balanced combination of hardness, corrosion resistance, and affordability. Belonging to the Cr-MoV family of steels, it is closely comparable to Japanese AUS-8 in terms of composition and performance, which makes it a popular alternative in value-oriented knives. The steel typically contains about 0.75–0.85% carbon and 13–15% chromium, providing a strong foundation for edge retention and rust resistance.
